Abstract
RAMA_41231_05091003011_0012065304_ 006116902_01_front_ref Tujuan penelitian ini adalah untuk menganalisis karakteristik fisik, kimia dan sensoris permen jeli dari belimbing wuluh (Averrhoa bilimbi L.). Penelitian ini dilakukan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Evaluasi Sensoris Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Desember 2013 sampai dengan Juni 2014. Penelitian menggunakan Rancangan Acak Kelompok (RAK) non factorial dengan satu faktor perlakuan yang terdiri dari enam taraf perlakuan dan masing- Faktor perlakuan yang diamati adalah penembahan gelatin (A : 5% gelatin, B : 7% gelatin, C : 9% gelatin, D : 11% gelatin, E : 13% gelatin, F : 15% gelatin). Parameter yang diamati meliputi karakteristik fisik (tekstur dan warna), karakteristik kimia (air, abu, dan vitamin c), dan karakteristik sensoris dengan uji hedonik (warna, tekstur, aroma dan rasa). Hasil penelitian menunjukkan bahwa konsentrasi penambahan gelatin berpengaruh nyata terhadap tekstur, warna (lightness, chroma, dan hue), kadar air, kadar vitamin C dan sifat sensoris dari uji hedonik (warna, tekstur, dan rasa). Namun, konsentrasi penambahan gelatin berpengaruh tidak nyata terhadap kadar abu dan sifat sensoris dengan uji hedonik terhadap aroma. Perlakuan E (penambahan gelatin 13%) merupakan perlakuan terbaik dengan nilai tekstur 532.800 gf, lightness 51,16%, chroma 32,86%, hue 79,44°, kadar air 34,47%, kadar abu 0,15%, kadar vitamin C 7,33%, dan hasil uji hedonik (warna 3,92, tekstur 3,28, aroma 2,60, dan rasa 3,64).
