Abstract
Tujuan penelitian ini adalah untuk mengetahui pengaruh karakteristik bubuk daun gaharu sebagai minuman fungsional. Penelitian ini dilaksanakan pada bulan Juni 2016 sampai dengan November 2016 di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan yaitu konsentrasi daun gaharu (5%, 10%, 15% b/v) dan konsentrasi putih telur (2,5%, 5% dan 7,5% v/v). Parameter yang diamati berdasarkan karakteristik fisik (indeks kelarutan air dan rendemen), karakteristik kimia (kadar air, total fenol, dan aktivitas antioksidan), serta uji organoleptic menggunakan uji hedonik terhadap aroma dan rasa. Hasil penelitian menunjukkan bahwa perlakuan konsentrasi daun gaharu berpengaruh nyata terhadap total fenol dan aktivitas antioksidan. Perlakuan konsentrasi putih telur berpengaruh nyata terhadap indeks kelarutan air, rendemen, kadar air, aktivitas antioksidan. Perlakuan penambahan A3B3 (konsentrasi daun gaharu 15% dan konsentrasi putih telur 7,5%) merupakan perlakuan terbaik dalam proses pembuatan bubuk daun gaharu berdasarkan sifat fisik, kimia yaitu indeks kelarutan air 74,48%, rendemen 83,48%, kadar air 6,10%, total fenol 981,49 mg TAE/100 g, dan aktivitas antioksidan IC50 1116,90 ppm, dan uji hedonik (rasa 2,64, dan aroma 2,94).
