Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik kimia dan fisika edible fdm berbahan baku pati ganyong termodifikasi menggunakan ikatan silang. Penelitian ini dilaksanakan di Labolatorium Kimia Hasil Pertanian pada bulan Desember 2009 sampai Juni 2010. Penelitian ini menggunakan Rancangan Acak Lengkap yang disusun secara Faktorial. Masing-masing perlakuan diulang tiga kali. Perlakuan pertama pati mumi dengan konsentrasi pati (4 %, 5 %, 6% dan 7 %) dan perlakuan ke dua pati modifikasi 0,08 % dengan konsentrasi pati (4 %, 5 %, 6 % dan 7 %). Parameter yang diamati adalah ketebalan, persen perpanjangan, laju transmisi uap air dan kuat tekan. Berdasarkan standar JIS 1975, edible film pati modifikasi dengan konsentrasi pati ganyong (4 %, 5 %, 6 %, dan 7 % ) memiliki karakteristik ketebalan yang baik yakni kurang dari 0,25 mm. Akan tetapi persen perpanjangannya belum baik karena masih di bawah standar JIS serta tramsmisi uap airnya juga kurang baik yakni lebih dari 10 g/m2.hari.
