Abstract
Penelitian ini bertujuan untuk untuk mengetahui suhu dan waktu pengukusan yang tepat pada pengukusan waluh merah atau golden mama (Cucurbita moschata L.) agar kandungan karotenoid tetap stabil. Penelitian ini Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya, Indralaya. Penelitian ini dilaksanakan pada bulan Maret sampai dengan Juli 2014. Penelitian ini menggunakan Rancangan Acak Kelompok Faktorial (RAKF) yang terdiri atas dua faktor perlakuan dan tiga ulangan. Faktor perlakuan yang diamati adalah suhu pengukusan (Au 75±2°C, A2; 80±2°C, and A3; 85±2°C) dan dilaksanakan di waktu pengukusan (Bu 25 menit and B2; 30 menit). Parameter yang diamati meliputi analisa fisik (kekerasan, warna, dan kadar air) dan analisa kimia (total padatan terlarut, kadar karoten total, dan aktivitas antioksidan). Hasil penelitian menunjukkan bahwa suhu pengukusan erpengaruh nyata terhadap kekerasan, lightness, nilai a*, nilai b*, kadar air, kadar karoten total, dan aktivitas antioksidan golden mama. Waktu pengukusan berpengaruh nyata terhadap kekerasan, nilai b*, kadar air, dan kadar karoten total golden mama. Interaksi antara suhu dan waktu pengukusan berpengaruh nyata terhadap kekerasan, nilai b*, kadar air, dan kadar karoten total golden mama. Buah golden mama perlakuan AjBi (suhu pengukusan 75±2 °C dan waktu pengukusan 25 menit) merupakan perlakuan terbaik dalam mempertahankan kandungan karoten dibandingkan perlakuan lain. Buah golden mama perlakuan AjBi memiliki nilai kekerasan 665,8 gf, lightness 54,37%, redness (a*) 19,53%, yellowness (b*) 41,83%, total perbedaan warna 12,5, kadar air 91,98 %, total padatan terlarut 1,13 °Brix, kadar karoten total 17,00 ppm, dan aktivitas antioksidan 0,93 mg/mL IC50
