Abstract

Tujuan penelitian ini adalah mempelajari karakteristik edible film komposit dari kolang kaling dan ekstrak daun cincau. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian, Fakultas Pertanian, Universitas Sriwijaya pada bulan April 2008 sampai Desember 2008. Penelitian menggunakan Rancangan Acak Lengkap (RAL) faktorial dengan dua perlakuan dan tiga ulangan. Perlakuan pertama adalah konsentrasi bubur kolang kaling (30%, 40%, 50%) dan perlakuan kedua adalah konsentrasi serbuk daun cincau (6%, 8%, 10%). Parameter yang diamati meliputi kadar air, ketebalan, kuat tekan, persentase perpanjangan, laju transmisi uap air, mikrostruktur, warna dan elastisitas edible film. Hasil penelitian menunjukkan bahwa penambahan bubur kolang kaling yang berbeda berpengaruh nyata terhadap ketebalan, kuat tekan, persentase perpanjangan, warna dan elastisitas edible film, sedangkan perbedaan konsentrasi serbuk daun cincau berpengaruh nyata terhadap ketebalan, warna dan elastisitas edible film. Peningkatan konsentrasi bubur kolang kaling menghasilkan edible film lebih tebal, kuat tekan yang besar dan persentase perpanjangan lebih tinggi. Perlakuan terbaik adalah konsentrasi bubur kolang kaling 50% dan konsentrasi serbuk daun cincau 6% karena edible film yang dihasilkan memiliki kadar air dan laju transmisi uap air yang lebih rendah serta kuat tekan, persentase perpanjangan dan elastisitas yang tinggi.
