Abstract

Tujuan penelitian ini adalah untuk mengurangi kerusakan pasca panen dan memperpanjang masa simpan buah duku dengan pelapisan gel lidah buaya. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian, Universitas Sriwijaya, Inderalaya. Waktu pelaksanaan dilakukan pada bulan Februari sampai bulan Maret 2009. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan tiga factor perlakuan dan tiga ulangan. Faktor perlakuan pertama adalah kondisi buah (duku bertangkai dan duku lepas tangkai), faktor perlakuan kedua adalah konsentrasi gel lidah buaya (0 %, 20%, 40% dan 60%) dan faktor perlakuan ketiga adalah lama pelapisan (10 dan 20 menit). Hasil dari penelitian ini menunjukkan bahwa duku bertangkai secara nyata dapat memperlambat pencoklatan kulit duku, menghambat pertumbuhan jamur, mengurangi kerusakan aril buah duku. Buah duku bertangkai yang dilapisi gel lidah buaya 20% dengan lama pelapisan 10 menit belum mengalami bercak coklat, serangan jamur dan kerusakan aril sampai hari ke-9 penyimpanan
