Abstract

Penelitian ini bertujuan untuk menentukan kematangan tempe berdasarkan ketebalan tempe dengan menggunakan sensor ultrasonik tipe PING. Metode penelitian terdiri dari perancangan, pembuatan dan pengujian terhadap instrumen . Pengujian alat ini dilakukan pada kedelai yang telah diberi ragi dan siap untuk dilakukan proses fermentasi. Pada penelitian ini menggunakan dua bentuk tempe yaitu tempe berbentuk kotak dan silinder. Parameter yang diamati adalah suhu pada ruang fermentasi, kelembaban dan ketebalan tempe. Suhu pada ruang fermentasi dikondisikan 30°C. Hasil pengamatan menunjukan bahwa tempe berbentuk kotak memiliki rata-rata ketebalan 31 mm dan tempe berbentuk silinder memiliki diameter rata-rata ketebalan 50 mm yang dinyatakan matang oleh mikrokontroler melalui pengukuran ketebalan dari sensor ultrasonik
