Abstract
Tujuan penelitian ini adalah mempelajari karakteristik fisik dan kimia edible film dari pati ganyong (Canna edulis Kerr) dan carboxyme1hyl cellulose (CMC). Penelitian ini dilaksanakan pada bulan November 2009 sampai dengan Mei 2010 di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) Faktorial dengan 2 faktor perlakuan berupa pati ganyong (P) yang terdiri dari 2 taraf perlakuan dan konsentrasi penambahan carboxymethyl cellulose (CMC) (C) yang terdiri dari 3 taraf perlakuan. Setiap kombinasi perlakuan diulang sebanyak tiga kali. Parameter yang diamati meliputi aktivitas air (Aw), ketebalan, persen perpanjangan, laju transmisi uap air, dan kuat tekan. Hasil penelitian menunjukkan bahwa perlakuan terbaik adalah perlakuan P2C2 (pati ganyong termodifikasi, carboxymethyl cellulose (CMC) 2%), dengan aktivitas air (Aw) 0,504, ketebalan 0,2224 mm, persen perpanjangan 37,333 %, laju transmisi uap air 8,643 g/m2hari, dan kuat tekan 126,600 gf.
