Abstract

Tujuan penelitian ini adalah untuk mengetahui konsentrasi dan lama perendaman optimum buah duku dalam putresin yang dapat mengendalikan kerusakan dan memperpanjang umur simpan buah duku, menggunakan Rancangan Acak Lengkap Faktorial (RAL) yang disusun secara faktorial dengan dua perlakuan dan tiga ulangan. Perlakuan pertama adalah Penelitian ini konsentrasi putresin (0 mM, 1 mM, 3 mM) dan perlakuan kedua adalah lama perendaman (5 menit, 10 menit, 15 menit). Penelitian dilaksanakan di Laboratorium Pertanian Program Pasca Saijana, Universitas Sriwijaya Bukit Besar, Palembang pada bulan Maret 2009 sampai Maret 2010. Parameter yang diamati adalah susut bobot, persen pencoklatan, kondisi aril, serangan jamur, total padatan terlarut dan kadar vitamin C. Hasil menunjukkan bahwa konsentrasi putresin dan lama perendaman berpengaruh nyata terhadap susut bobot, persen pencoklatan, kondisi aril, serangan jamur dan total padatan terlarut. Perendaman putresin 1 mM selama 10 menit adalah perlakuan terbaik untuk memperpanjang umur simpan buah duku sampai 11 hari penyimpanan dengan suhu 18°±2° C.
