Abstract
Tujuan penelitian ini adalah untuk mengetahui pengaruh ekstrak biji pinang sebagai pengawet pangan alami yang bersifat aman, efektif dan substitutif sebagai pengawet tahu. Penelitian ini menggunakan rancangan acak kelompok factorial dengan dua faktor perlakuan dan masing-masing perlakuan diulang sebanyak tiga kali. Perlakuan pertama dilakukan pada biji pinang (biji pinang segar dan biji pinang yang telah dikeringkan) dan perlakuan kedua meliputi konsentrasi ekstrak biji pinang (0%, 2%, 4%, dan 6%). Parameter yang diamati meliputi kadar air, kadar abu, kadar protein, pH, kekerasan, mikrobia total dan uji hedonik. Hasil penelitian menunjukkan bahwa penggunaan berbagai konsentrasi ekstrak biji pinang berpengaruh nyata terhadap semua parameter. Jumlah koloni mikrobia tertinggi terendah pada tahu dengan penambahan ekstrak sebanyak 6%.
