Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh suhu pengeringan dan lama penyimpanan terhadap karakteristik serbuk kulit kayu bungur. Bungur bermanfaat dalam memelihara kesehatan terutama pada daun, biji dan kulitnya. Penelitian ini dilaksanakan menggunakan Rancangan Acak Kelompok Faktorial dengan dua faktor perlakuan dan masing-masing perlakuan diulang sebanyak tiga kali. Dua faktor ini meliputi suhu pengeringan (50°C dan 60°C) dan penyimpanan selama (0, 10, 20 dan 30 hari). Parameter yang diamati meliputi kadar air, fitokimia (kualitatif), rehidrasi, warna (lightness, chroma dan hue) dan kadar tanin. Hasil penelitian menunjukkan bahwa suhu pengeringan berpengaruh sangat nyata terhadap kadar air, lightness, dan chroma serbuk kulit kayu bungur. Lama penyimpanan berpengaruh sangat nyata terhadap kadar air dan berpengaruh nyata terhadap rehidrasi, lightness, dan chroma serbuk kulit kayu bungur. Interaksi antara suhu pengeringan dan lama penyimpanan berpengaruh nyata terhadap hue serbuk kulit kayu bungur. Senyawa flavonoid dan triterpenoid terdapat pada semua perlakuan. Serbuk kulit kayu bungur yang dikeringkan menggunakan suhu 50°C yang disimpan selama 10 hari merupakan perlakuan terbaik yang mempunyai kadar air 7,96%, senyawa fitokimia (flavonoid dan triterpenoid), rehidrasi 1,60 menit, (lightness 62,07, chroma 17,50 dan hue 67,37°), kadar tanin 0,58% (bb) dan kadar tanin 0,58% (bk).
