Abstract
Tujuan penelitian ini adalah untuk membuat alat pengukus baglog jamur tiram (Pleurotus sp.) tipe rak serta menguji total mikrobia pada baglog yang telah dikukus. Penelitian ini dilaksanakan di Kumbung Jamur Tiram Talang Buruk Palembang pada bulan Juli 2011 sampai April 2012. Penelitian ini menggunakan metode perancangan alat, pembuatan alat dan pengujian alat. Parameter yang diamati yaitu kapasitas alat, efisiensi alat, energi panas, total mikroba baglog dan kebutuhan bahan bakar. Berdasarkan hasil penelitian menunjukkan bahwa nilai kapasitas teoritis sebesar 142 baglog, kapasitas efektif sebesar 100 baglog, efisiensi alat sebesar 70,3 %, nilai total energi panas 122435,2 KJ, laju massa air yang diuapkan 3,7125 kg/jam, debit uap air yang diuapkan 1,6615 L/detik dengan waktu pengukusan selama 12 jam. Selain itu, alat pengukus baglog jamur tiram ini membutuhkan bahan bakar sebesar 35283,202 KJ/jam selama 12 jam proses pengukusan. Pada penelitian ini juga didapatkan hasil total mikroba baglog jamur yang jumlahnya semakin berkurang dari sebelum dikukus sampai pada 12 jam proses pengukusan
