Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh penambahan kombinasi asam sitrat dan asam tartrat sebagai sumber asam terhadap karakteristik tablet effervescent ekstrak gambir (Uncaria gambir Roxb.). Penelitian ini dilaksanakan pada bulan Mei 2010 sampai dengan bulan November 2010 di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RALf) yang disusun secara faktorial dengan 2 perlakuan, yaitu konsentrasi ekstrak gambir (factor A : 4%, 6% dan 8%), kombinasi asam sitrat dan asam tartrat (Faktor B : asam sitrat 12% dan asam tartrat 24%, asam sitrat 14% dan asam tartrat 22%, asam sitrat 16% dan asam tartrat 20%). Percobaan diulang sebanyak tiga kali. Parameter yang diamati meliputi uji sifat fisik granula (sudut diam dan kadar pemampatan) dan uji sifat fisik dan kimia tablet (kadar air, pH, kekerasan, waktu larut, waktu mengapung, berat jenis dan uji sensoris). Tablet effervescent dengan konsentrasi ekstrak gambir 8% dan kombinasi 16% asam sitrat dan 20% asam tartrat merupakan perlakuan yang paling disukai panelis berdasarkan evaluasi sensoris (aroma dan rasa). Asam sitrat bersifat dominan dalam menentukan kecepatan alir granula, kekerasan, waktu mengapung dan berat jenis tablet, sedangkan asam tartrat lebih dominan dalam menentukan nilai pH tablet effervesceni. Tablet effervescent yang dihasilkan belum memenuhi standar kadar air, sudut diam granula dan waktu larut tablet
