Abstract
Penelitian ini bertujuan untuk merancang bangun alat pengering kemplang tipe rak menggunakan energi surya, Penelitian ini dilaksanakan di Industri pembuatan kerupuk kemplang “ELLEN” Jl. Sriwijaya Jaya RT 06 , Kecamatan Pemulutan dan di Bengkel Teknik Pertanian serta Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Pelaksanaan penelitian dimulai pada bulan November 2009 sampai dengan Maret 2010. Data yang diamati adalah perubahan suhu selama proses pengeringan berlangsung, kadar air awal, kadar air akhir bahan, waktu pengeringan, kelembaban udara lingkungan dan kelembaban udara pengeringan. Hasil perhitungan menunjukkan efisiensi pengering pada uji coba 1, 2 dan 3 sebesar 78,5 %, 64,96 %, dan 64,19 %. Efisiensi pengeringan sebesar 64,19 % sampai 78,5 %, ini menunjukkan bahwa kualitas kerja alat pengering sudah cukup baik bahkan dapat menurunkan kadar air akhir bahan sebesar 11,30 % bb sampai 15,97 % bb dengan waktu pengeringan 7 jam, laju penurunan kadar air bahan masing-masing sebesar 1,61 % bb/jam sampai 2,28 % bb/jam.
