Abstract
Penelitian ini bertujuan untuk mengetahui hubungan lama perendaman dan suhu perendaman terhadap rendemen susu kedelai. Penelitian ini dilaksanakan di Laboratorium Biosistem dan Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya. Penelitian ini menggunakan metode deskripsi melalui pengamatan, penyajian secara tabulasi dan grafik yang terdiri dari 2 faktor perlakuan yaitu faktor A (lama perendaman) dan faktor B (suhu perendaman). Masing-masing faktor perlakuan terdiri dari 3 taraf. Parameter yang diamati pada penelitian ini adalah pertambahan bobot biji kedelai, pertambahan volume biji kedelai, dan tekstur biji kedelai. Hasil penelitian ini menunjukkan bahwa lama perendaman dan suhu perendaman dapat meningkatkan persentase rendemen dan laju pemisahan secara sentrifugasi. Perendaman selama 12 jam dapat meningkatkan persentase rendemen, yang dalam penelitian ini sampai 76,90 %. Perendaman dengan suhu 54 °C dapat meningkatkan persentase rendemen sampai 76,82 %. Laju pemisahan tertinggi adalah 11,08 g/s.
