Abstract

Tujuan penelitian ini adalah untuk mengetahui jenis dan konsentrasi filler yang menghasilkan formulasi terbaik minuman fungsional instan dari daun gambir. Penelitian ini dilakukan di Laboratorium Kimia Hasil Pertania, Laboratorium Mikrobiologi Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya Indralaya dan Laboratorium Kimia Jurusan Teknik Kimia Politeknik Negeri Sriwijaya pada bulan April 2010 sampai dengan Agustus 2010. Penelitian ini menggunakan Rancangan Acak Kelompok Faktorial (RAKF) dengan dua perlakuan dan tiga ulangan. Dua perlakuan yang diamati adalah perbedaan jenis bahan pengisi (Ai : dekstrin, A2: gum arabik, A3; maltodekstrin) dan konsentrasi penambahan bahan pengisi (Bi : 2,5%, B2 : 5%, B3 : 7,5%). Parameter yang diamati meliputi rendemen, waktu larut, warna (lightness, chroma, hue), aktivitas antioksidan, total fenol dan kadar klorofil total. Hasil penelitian menunjukkan bahwa perlakuan perbedaan jenis bahan pengisi berpengaruh nyata terhadap rendemen, waktu larut, lightness, chroma, total fenol dan kadar klorofil total. Perlakuan penambahan konsentrasi bahan pengisi berpengaruh tidak nyata terhadap rendemen, lightness, chroma, hue dan total fenol. Interaksi perlakuan perbedaan jenis bahan pengisi dan konsentrasi perbedaan jenis bahan pengisi berpengaruh nyata terhadap waktu larut dan kadar klorofil total. Perlakuan A2B3 merupakan perlakuan terbaik berdasarkan sifat fungsional (aktivitas antioksidan 19,36%, kadar klorofil total sebesar 0,87% dan total fenol 0,4%).
