Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh frekuensi minyak goreng yang digunakan dalam pembuatan keripik labu kuning (Cucurbita moschata) terhadap karakteristik fisik dan kimia minyak goreng yang digunakan. Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Oktober 2012 sampai dengan Juni 2013. Penelitian menggunakan Rancangan Acak Lengkap non Faktorial (RAL) dengan perlakuan siklus penggorengan. Terdiri dari 10 taraf perlakuan dan diulang sebanyak 3 kali. Parameter yang diamati meliputi karakteristik fisik (viskositas, warna) dan kimia (kadar air, bilangan peroksida, asam lemak bebas, bilangan iod dan kadar kotoran). Hasil penelitian menunjukkan bahwa warna minyak goreng memiliki kisaran nilai lightness 53.53% hingga 42.84%, chroma 32.43% hingga 25.03%, hue 94.67 hingga 87.60, viskositas 1.71 N detik/m2 x 10'3 hingga 2.05 N detik/m2 x 10'3, kadar air 0.19% hingga 2.68%, asam lemak bebas 0.17% hingga 0.39%, bilangan peroksida 0.56 meg 02/kg hingga 1.94 meg 02/kg, bilangan iod 49.28 hingga 36.27, kadar kotoran 0.21% hingga 1.62%. Frekuensi penggorengan berpengaruh nyata terhadap semua perlakuan yaitu lighlness, chroma, hue, viskositas, kadar air, asam lemak bebas, bilangan peroksida, bilangan iod dan kadar kotoran.
