Abstract

Penelitian ini bertujuan untuk mempelajari dan mengetahui pengaruh berbagai metode pengeringan terhadap karakterisktik fisik dan kimia daun Gaharu (Aguilaria malaccensis). Penelitian ini dilaksanakan di laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Maret 2012 sampai dengan November 2012. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan satu faktor perlakuan yaitu metode pengeringan yang terdiri dari 5 taraf perlakuan, yaitu A (dehumidifier 5 °C ± 2 °C, RH 50% 5% selama 7 hari), B (suhu ruang 28-33°C, RH 70-79%, selama 48 jam), C (suhu ruang 28-33°C, RH 70-79%, kondisi gelap selama 48 jam), D ( sinar matahari 29- 38,5°C, RH 53-75% selama 14 jam) dan E (oven 40°C, RH 25% ± 5%, 12 jam). Masing-masing percobaan diulang sebanyak tiga kali. Parameter yang digunakan meliputi rendemen, pengukuran warna, total fenol, aktivitas antioksidan, kadar tanin, aktivitas air, kadar air dan kadar abu. Hasil penelitian menunjukkan bahwa metode pengeringan berpengaruh nyata terhadap rendemen, warna (lightness, chroma and hue), total fenol, kadar tanin, kadar air dan aktivitas air. Perlakuan terbaik pada penelitian ini adalah perlakuan A (dehumidifier 5 ± 2°C, RH 50 ± 5%, 14 jam) dengan nilai kadar air 8,87% bb (basis basah), rendemen 39,08%, aw 0,37, lightness 59,17%, chroma 19,13%, hue 102,2°, total fenol 288,57 ppm dan kadar tanin 97,07 ppm.
