Abstract

Tujuan penelitian ini untuk mengetahui karakteristik cookies beras merah dan beras putih dengan penambahan tempe sebagai makanan ringan untuk anak autis. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian dan Laboratorium Biomassa Jurusan Teknik Kimia Fakultas Teknik, Universitas Sriwijaya serta Yayasan Bina Autis Mandiri Palembang pada bulan April sampai Agustus 2010. Metode penelitian ini menggunakan Rancangan Acak Lengkap (RAL) Faktorial dengan dua faktor, yaitu jenis beras yang terdiri dari dua taraf (Aj : beras putih dan A2 : beras merah) dan konsentrasi penambahan tempe dengan tiga taraf (Bj : 25 %, B2 : 50 %, B3 : 75 %). Parameter yang diamati meliputi derajat pengembangan, tekstur, warna, kadar air, kadar abu, kadar protein, kadar lemak. kadar serat kasar, carbohydrate by difference serta uji sensoris. Hasil penelitian menunjukkan bahwa perlakuan jenis beras berpengaruh nyata terhadap derajat pengembangan, warna dan kadar protein, sedangkan konsentrasi tempe berpengaruh nyata terhadap derajat pengembangan, kadar air dan kadar protein. Interaksi perlakuan jenis beras dan konsentrasi tempe berpengaruh nyata terhadap kadar air. Secara sensoris cookies yang disukai panelis yaitu cookies beras putih dan konsentrasi tempe 25 % atau perlakuan AjB| dengan 6,39 % derajat pengembangan; 611,4 gf tekstur; 72,03 % lightness; 30,3 chroma; 78,00° hue; 2,34 % kadar air; 1,15 % kadar abu; 2,69 % kadar protein; 30,57 % kadar lemak; 14,13 % serat kasar dan 64,29 % carbohydrate by difference
