Abstract

Penelitian ini bertujuan untuk mempelajari sifat pH optimum dan konsentrasi ekstrak gambir dengan penambahan protein belut sawah terhadap edible film anti bakteri. Penelitian ini dilaksanakan pada bulan Oktober 2011 hingga April 2012 di Laboratorium Kimia Hasil Pertanian dan Laboratorium Mikrobiologi Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Penelitian ini dilakukan dengan menggunakan Rancangan Acak Lengkap (RAL) yang disusun secara faktorial dengan tiga kali ulangan. Faktor perlakuannya adalah konsentrasi gambir (2%, 4%, 6%) dan perlakuan pH (5, 7, 9) dan dilakukan pengulangan sebanyak tiga kali. Parameter yang diamati meliputi aktivitas air, ketebalan, wama, persen perpanjangan, laju transmisi uap air, kuat tekan, kelarutan dan uji mikroba. Hasil penelitian menunjukan bahwa konsentrasi konsentrasi gambir, perlakuan pH dan interaksi kedua perlakuan berpengaruh nyata pada taraf uji 5 % terhadap aktivitas air, kelarutan, laju transmisi uap air, wama (chroma) dan kuat tekan edible film. Penambahan konssentrasi gambir dimaksudkan agar edible film yang dihasilkan dapat memiliki sifat anti bakteri, berdasarkan uji mikroba dengan metode menunjukkan tidak sumur an ada hasil yang positif (tidak menghambat). Berdasarkan karakteristiknya ketebalan (0,203 mm hingga 0,244 mm), laju transmisi uap air (8,25 g.m .hari hingga 9,59 8,25 g.m'2.hari‘I dan persen perpanjangan (48,67% hingga 110%) telah memenuhi standar JIS (Japanese Industrial Standard).
