Abstract

Penelitian ini bertujuan untuk mempertahankan mutu fillet ikan gabus mengetahui pengaruh penambahan larutan garam, sukrosa, asam sitrat konsentrasi rendah dan perbedaan lama penyimpanan terhadap mutu fillet ikan gabus yang disimpan pada suhu 4°C. Penelitian dilaksanakan pada bulan Juni sampai Juli 2013 di Laboratorium Teknologi Hasil Perikanan, Laboratorium Budidaya Perairan, Laboratorium Kimia dan Kesuburan Tanah dan Laboratorium Kimia dan Mikrobiologi Teknologi Hasil Pertanian Universitas Sriwijaya. Rancangan yang digunakan berupa Rancangan Acak Kelompok Faktorial (RAKF) dengan 2 faktor yang diulang sebanyak dua kali. Faktor pertama yaitu perbedaan larutan terdiri dari A0 (kontrol), Al (larutan garam dan sukrosa), A2 (larutan garam, sukrosa, dan jeruk nipis), faktor kedua yaitu lama penyimpanan (B0, B3, B6, B9, B12, B15, B18 dan B21). Parameter yang diamati yaitu WHC, aw, warna, TVB, pH dan TPC. Hasil penelitian menunjukkan bahwa WHC, tfw, TVB, pH dan TPC mengalami kenaikan sedangkan Lightness, Chroma dan Hue mengalami fluktuasi selama penyimpanan. Batas jumlah mikroba yang diizinkan untuk A0 yaitu hari ke-9 (3,9 x 105), Al hari ke-9 (2,9 x 105) sedangkan A2 hingga hari ke-18 (3,9 x 105).
