Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik silase keong (Pomacea canaliculatd) secara kimiawi dan mikrobiologi menggunakan kultur bakteri asam laktat (BAL) 3B104. Penelitian ini dilaksanakan pada bulan Juni 2011 sampai dengan bulan Juni 2012 di Laboratorium Teknologi Hasil Perikanan, Laboratorium Budidaya Peraiaran, Laboratorium Nutrisi Makanan Ternak, Laboratorium Bioproses Jurusan Teknik Kimia, Fakultas Teknik, Universitas Sriwijaya dan Balai Besar Laboratorium Kesehatan Palembang. Rancangan yang digunakan berupa Rancangan Acak Kelompok (RAK) Faktorial dengan dua faktor perlakuan yang diulang sebanyak tiga kali. Faktor perlakuan terdiri dari perbedaan persentasi asam format dan tanpa penambahan dan dengan penambahan kultur bakteri asam laktat (BAL) 3B104. Parameter yang diamati meliputi sifat kimia (nilai pH, kadar air, kadar abu, kadar protein, kadar lemak, karbohidrat, serat kasar) dan mikrobiologi (penentuan total mikroba, uji Salmonella, uji Escherischia coli). Hasil penelitian menunjukkan bahwa perlakuan perbedaan persentasi asam format dan dengan penambahan kultur bakteri asam laktat (BAL) 3B104 berpengaruh terhadap nilai pH, kadar air, kadar protein, kadar abu, karbohidrat dan serat kasar. Silase keong dengan kadar protein tertinggi (14,54%) diperoleh dari kombinasi perlakuan persentasi asam format 3,5% tanpa penambahan kultur bakteri asam laktat (BAL) 3B104. Kombinasi perlakuan persentasi asam format 85% tanpa penambahan kultur bakteri asam laktat (BAL) 3B104 merupakan perlakuan terbaik dengan nilai pH 4,73, kadar air 78,91%, kadar abu 2,43%, kadar protein 14,54%, kadar lemak 0,60%, karbohidrat 2,17%, serat kasar 1,34%, jumlah total mikroba sebanyak 5,78 CFU/gram, Salmonella dan Escherischia coli negatif.
