Abstract
This research aimed to determine the physical and chemical super red dragon fruit skin jelly candy. This research used a Non-Factorial Completely Randomized Design (RAL) with five factors and the treatment was repeated 4 times. The treatment factor include super red dragon fruit skin (100 mL, 110 mL, 120 mL, 130 mL and 140 mL). The parameters observed included physical characteristic (color and hardness) and chemical characteristic (moisture content, ash content and pH). The result showed that dragon fruit peel had a very significant affect on color (Lightness (L*) and Redness (a*)). hardness and moisture content, and significantly affect the ash content. Jelly candy with 120 mL dragon fruit peel concentration is the best treatment based on physical characteristics to color (L*; 33,83, a*; 0,02, dan b*; 3,72), hardness 807,05, and chemical characteristics to ash content 0,237% and pH 5,51.
