Abstract
Pati porang bebas kalsium oksalat merupakan sumber potensial dalam peningkatan ketersediaan dan ketahanan pangan. Penelitian penghilangan kalsium oksalat pada pati porang bertujuan untuk menapatkan metoda penghilangan kalsium oksalat pada pati porang menggunakan perendaman dalam larutan asam sitrat dan menghasilkan pati bebas kalsium oksalat serta mempelajari karakteristik fisik dan kimia pati porang. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan. Perlakuan tersebut diulang sebanyak tiga kali. Pati porang dari Pabrik Asia Prima Konjac dihilangkan kandungan kalsium oksalatnya menggunakan perendaman dalam larutan asam sitrat pada konsentrasi berbeda (0%, 5%, 10% dan 15%) dengan lama perendaman 30 menit. Parameter yang diamati yaitu kadar kalsium oksalat, kadar abu, kadar air, derajat putih, swelling power, dan indeks kelarutan air. Hasil penelitian ini menunjukkan bahwa konsentrasi asam sitrat berpengaruh nyata terhadap kadar abu, kadar air dan derajat putih pati porang. Pengaruh agitasi berpengaruh nyata terhadap kadar abu pati porang. Perlakuan A2B1 (Asam Sitrat 15% tanpa agitasi) merupakan perlakuan terbaik berdasarkan penurunan nilai kadar kalsium oksalat terendah yaitu 1,15% dengan kadar abu 3,67%, kadar air 8,33%, derajat putih 75,53, swelling power 9,24 g/g dan indeks kelarutan air 4,21%.
