Abstract

Butterfly pea contains anthocyanin which has an anti-inflammatory effect. The purpose of this study was to determine the best temperature, time and pH based on the determination of the percent yield, anthocyanin levels and IC50 value of anti-inflammatory activity of butterfly pea extract. The study was conducted by varying the extraction temperature (30 and 50°C), extraction time (10 and 30 minutes) and solvent pH (1 and 3). Determination of the best conditions using Design Expert application. Based on Design Expert 12® analysis, the best ultrasonic extraction conditions with the highest desirability value at an extraction temperature of 50°C, an extraction time of 30 minutes and solvent pH 1 resulted a percent yield of 32.02%, anthocyanin levels 84.86 mg/100g and an anti-inflammatory IC50 value of 32.69 µg/mL. The results of the anti-inflammatory IC50 value of butterfly pea extract were also included in very strong category when compared to diclofenac sodium as a positive control which had a value of 11.43 µg/mL.
