Abstract

Indonesia has one of the largest mangrove ecosystems in the world. Ogan Komering Ilir Regency and Banyuasin Regency are the producing regions for nipa palm (Nypa fruticans Wurmb). Nipa palm has the potential to be a high-fiber food ingredient that can decrease the hazard of diseases caused by overabundance cholesterol. This research was conducted in May-June 2022 to analyze total dietary fiber content, crude fiber, oil binding capacity (OBC), and moisture content of N. fruticans as flour food ingredient and to adjudicate the ecological relationship of environmental parameters to fruit content. Nipa fruit was picked at two locations; Payung Island, Banyuasin Regency and Sungai Lumpur, Ogan Komering Ilir Regency. Analysis of total dietary fiber content was carried out by proximate analysis. Based on proximate analysis, N. fruticans fruit flour from Sungai Lumpur station had insoluble dietary fiber content of 60,65%, 0.75% soluble dietary fiber, 60.64% dietary fiber, 52.81% crude fiber, 5.51% moisture content, and 1,99mg/g OBC, whereas Payung Island station had 63.70% insoluble dietary fiber content, 0.89% soluble dietary fiber, 64.60% dietary fiber, 50.39% crude fiber, 5.31% moisture content, and 2.00mg/g OBC. Sungai Lumpur station produced higher levels of crude fiber than Payung Island station, while Payung Island station produced higher levels of dietary fiber than Sungai Lumpur station. Nipa fruit samples from the two stations had significant average contrast and demonstrated that environmental parameters affected fruit content.
