Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh penambahan jenis dan konsentrasi ekstrak teh (Camellia sinensis) sebagai sumber nitrogen organik terhadap karakteristik Nata de pina. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya, pada bulan juni 2018 sampai Februari 2019. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan, yaitu faktor A (jenis ekstrak teh) dan faktor B (konsentrasi ekstrak teh). Parameter yang diamati meliputi karakteristik fisik (ketebalan, rendemen, tekstur dan warna), karakteristik kimia (kadar air dan kadar serat kasar), dan karakteristik organoleptik (uji Duo trio). Hasil penelitian menunjukkan bahwa perlakuan jenis ekstrak teh berpengaruh nyata terhadap rendemen, ketebalan, kekerasan, warna dan kadar serat kasar Nata de pina. Perlakuan konsentrasi ekstrak teh berpengaruh nyata terhadap ketebalan, kekerasan, warna dan kadar serat kasar Nata de pina. Interaksi perlakuan jenis dan konsentrasi ekstrak teh berpengaruh nyata terhadap ketebalan dan warna (lightness/kecerahan) Nata de pina. Uji organoleptik (uji Duo trio) menunjukkan bahwa sampel standar berbeda dengan sampel perlakuan terbaik Nata de pina (teh hijau konsentrasi 4%).
