Abstract

Tujuan dari penelitian ini adalah untuk mempelajari karakteristik chips ubi jalar pada berbagai tingkat formulasi bubur buah dan tepung tapioka yang digunakan selama penyimpanan. Penelitian ini dilaksanakan pada bulan Januari 2006 sampai dengan Maret 2006 di Laboratorium Kimia Hasil Pertanian dan Laboratorium Mikrobiologi Hasil Pertanian jurusan Teknologi Pertanian, Fakultas Pertanian Universitas Sriwijaya, Indralaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) Faktorial dengan 2 perlakuan berupa formulasi chips ubi jalar (A) dan lama penyimpanan (B). Setiap perlakuan diulang sebanyak tiga kali. Parameter yang diamati meliputi kadar air, kadar abu, persentase pengembangan, volume spesifik, warna, indeks kecoklatan, kadar protein, Uji Hedonik dan Uji Mutu Hedonik. Hasil penelitian menunjukkan bahwa perlakuan 30% bubur ubi jalar dan 70% bahan dasar, dan lama penyimpanan 10 hari serta perlakuan 30% bubur ubi jalar dan 70% bahan dasar, dan lama penyimpanan 20 hari berpengaruh nyata terhadap semua parameter. Chips ubi jalar dengan komposisi bubur ubi jalar 30%, tapioka 40%, kaldu kepala ayam 25%, garam 3% dan gula 2% merupakan perlakuan terbaik.
