Abstract

Tujuan penelitian ini adalah memberikan fortifikasi protein dengan penambahan sari kedelai dan susu sapi pada permen jelly timun suri (Cucumis melo L.). Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian. Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya Indralaya pada bulan Mei sampai dengan September 2009. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua perlakuan dan tiga ulangan. Dua perlakuan yang diamati adalah sumber protein (Ai ; sari kedelai dan A2 ; susu sapi) dan konsentrasi sumber protein (Bi ; 10%, B2; 15%, B3; 20%). Parameter yang diamati meliputi kadar air, kadar abu, tekstur, pH, kadar protein dan uji organoleptik. Hasil penelitian menunjukkan bahwa perlakuan penambahan sumber protein berpengaruh nyata terhadap kadar abu, nilai pH, dan tekstur jelly timun suri. Perlakuan peningkatan konsentrasi protein berpengaruh nyata terhadap kadar air, kadar abu, nilai pH, dan tekstur permen jelli timun suri. Interaksi perlakuan berpengaruh nyata terhadap nilai pH dan tekstur. Kadar protein pada permen jelly timun suri pada perlakuan A2B3 (susu sapi 20%) adalah 2,46% .dan pada perlakuan A1B2 (sari kedelai 15%) adalah 2,01%. Uji organoleptik, menunjukkan perlakuan A2B3 (susu sapi 20%) memiliki rata-rata tingkat kesukaan panelis tertinggi
