Abstract

Telah dilakukan penelitian dengan judul Penentuan Konsentrasi NaHC03 dan Lama Perendaman Optimal terhadap Mutu Organoleptik Tahu Kecipir (Psophocarous tetragonolobus). Penggunaan NaHC03 ini bertujuan untuk membantu proses pelunakkan biji kecipir. Penelitian ini bertujuan untuk mengetahui konsentrasi NaHC03 dan Lama Perendaman Optimal sehingga dapat menghasilkan tahu kecipir dengan mutu organoleptik yang sesuai dengan SNT dan disukai masyarakat. Sampel biji kecipir dalam penelitian diperoleh dari desa Babatoman kabupaten MUBA. Dari hasil penelitian menunjukkan bahwa konsentrasi NaHC03 dan lama perendaman optimal untuk dapat menghasilkan tahu kecipir dengan tekstur dan rasa yang sesuai dengan SNI dan disukai masyarakat yaitu pada konsentrasi NaHCOa 0,6 % dengan lama perendaman 18 jam. Hal ini ditunjukkan dengan diperolehnya nilai yang diberikan panelis sebesar 3,97 untuk tekstur dan 3,93 untuk rasa yang berarti “suka”. Sedangkan untuk menghasilkan tahu kecipir dengan aroma dan warna yang disukai masyarakat dapat dilakukan dengan merendam biji kecipir dalam larutan NaHC03 1 % dengan lama perendaman 24 jam.
