Abstract

This research aim to determine the sorpsi isotherm and approximating the self life of banana dodol pursuant to critical water activity value at one particular certain depository condition which can be reached relatively quickly and expense cheap. At this research, the dodol made have the rate irrigate early mean 15,768% lower then gyration assess the rate irrigate the dodol according to Satiawihardja (1994) gyrating 20 until 50% but stay in gyration of wet semi rate product 10-40% according to Astawan (1991). The dodol is made from modification of formulation treatment of Mirawati (2003) that is from comparison of rice powder of soft rice and banana mush 1:3 becoming 1:1,5. While chemistry compound which better in used gyrate from RH 10-90% can only be tried at gyration RH 20, 40, 50, 60, 70, 80 and 90%. The depository time depth difference from tidy product of banana dodol that is gyrate 8 to 13 depository time day.
