Abstract

This study aims to examine changes in lactic acid bacteria and bioactive compounds during bekasam fermentation. A total of 3 storage conditions of fermentation were used namely jar container, vacuum and non-vacuum plastic, where each sample was fermented for 7, 11, and 15 days. Data were analyzed by describing each parameter namely total lactic acid bacteria, amino acid, free fatty acids, and lovastatin. The results showed that the prolonged fermentation time in the different storage conditions produced total lactic acid bacteria of 6.49-6.72 log cfu/ml, bioactive compounds such as amino acid, free fatty acid 0.797-3.386%, as well as fatty acid and lovastatin 53.48- 74.99 ppm
