Abstract

The application of food sanitation hygiene in hawker food traders is essential in preventing food contamination. The selection of locations in elementary schools in the Indralaya District is because, in general, elementary schools doesn't have school canteens. Some schools have less attractive canteens, so students are more interested in consuming snacks sold by hawker food vendors in the school environment. The study aimed to look at efforts to implement food sanitation hygiene in hawker food vendors in the elementary school environment in Indralaya District. This research uses qualitative data collection techniques through observation, in-depth interviews, and documentation. The informants in this study were the Indralaya Health Center as the key informant and the hawker food vendors as the primary informants. Data analysis and presentation are in the form of narrative text and tables/matrices. Data validation uses method triangulation, data triangulation, and theory triangulation. This study found that most hawker food vendors in elementary schools in Indralaya Subdistrict have sufficient knowledge about the hygiene and sanitation of hawker food, starting from personal hygiene, equipment, presentation, and presentation facilities. The actions of hawker food traders regarding food sanitation hygiene regarding personal hygiene, equipment, production, and facilities are still lacking in the application following Permenkes No. 942 of 2003 concerning guidelines for food sanitation hygiene requirements, from personal hygiene, such as not washing hands before serving food and long nails. Equipment used needs to be cleaned, and do not wash equipment in running water. The facilities doesn't have trash can, a place to store equipment and food ingredients, and a place to wash hands. Although the serving has been appropriately implemented, some still use exposed containers.
