Abstract

The purpose of this study was calculate the energy requirements of vacuum dryers using water vapor as a heat source, observe and study the temperature distribution in the vacuum drying chamber. This research was conducted at the Biosystem Laboratory of the Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University in September 2018 until December 2018. This study used an experimental method and data collected in the form of tables and graphs. Parameters observed included the water content of the material, the temperature distribution in the vacuum chamber, water vapor flow rate, the mass of evaporated water, analysis of energy requirements, heating efficiency and drying rate. The highest drying rate temperature is at 40oC while the lowest is at 30oC. The higher temperature treatment, the drying rate will increase. The lowest water content of pineapple was obtained at a treatment temperature of 40oC which was equal to 19.54%. The highest total energy requirement in temperature treatment of 35oC was 19,404.21 kJ and the lowest energy of 30oC was 17,578.44 kJ. The calculation results of heating effeciency value at temperature treatment of 30oC, 35oC and 40oC are 41.79%, 42.62% and 34.53%.
