Abstract

The objective of this research was to design ice gel refrigerated packaging made from cassava skin waste (Manihot esculenta) for oyster mushroom (Pleurotus ostreatus) transportation. The research was conducted from March until June 2018. This research used experimental method consisting some stages as follows: 1.) modification of transportation packaging, 2.) modification of oyster mushroom transportation, 3.) manufacture and characteristics observation of ice gel, 4.) determination of ice gel amount and placement on the packaging, 5.) applying of ice gel from cassava skin waste on package loaded with ±4 kg oyster mushrooms and without load. The observed parameters were distribution of temperature on the packaging with ± 4 kg load of ice gel as cooling media. The results showed that cassava skin waste ice gel can maintain temperature of ≤ 15° C on the packaging styrofoam box without load during 17 hours, cassava skin waste ice gel can maintain temperature of ≤ 15° C on the packaging styrofoam box with the ± 4 kg load of oyster mushrooms during 8 hours and forty minutes and after that temperature increased until 21,5° C during 24 hours. The packaging of styrofoam box refrigerated cassava skin ice gel visually invisible on oyster mushrooms quality in terms of weight loss, texture, color, and aroma after 24 hours of storage.
