Abstract

The objective of this research was to determine characteristics of kweni mango (Mangifera odorata Griff) jam in various of cooking time and gelatin addition. The experiment was conducted at Chemical of Agricultural Product Laboratory at Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, from March 2017 to December 2017. The experiment used a Factorial Completely Randomized Design with two factors and each treatment was repeated three times. The first factor was the concentration of gelatin (0.5% and 2%), and the second factor was the cooking time (3, 6, 9, and 12 minute). The parameters were physical characteristics (color), chemical characteristics (moisture content, pH, total acidity, sugar reduction, and brown index) and hedonic test (flavour, color, taste and topicality). The results showed that the concentration of gelatin had significant effect on color lightness, yellowness and pH. The cooking time had significant effect on lightness, yellowness, moisture content, pH, total acidity, brown indexand sugar reduction. The interaction of those factors had significant effect on yellowness of kweni mango jam. Based on hedonic test, the best treatment was found in A2B4 (gelatin 2% and cooking time 12 minute) with the characteristics for moisture content 45.59 %, L* 36.27, a*4.26, b* 11.13, pH 4.15, total acidity 3.65ml KOH/100g, brown index 0.55 Abs420nm, sugar reduction 4.03% and hedonic scores for flavour 3.20%,color 2.80%, and taste 3.16%, topicality 3.20%.
