Abstract

The objective of this research was to determine the effect substitution of yellow sweet potato flour on physical, chemical, and sensory characteristics of sweet bread. The experiment used a Factorial Block Randomized Design with three treatments and three replications for each treatment. The first factor was addition yellow sweet potato flour (0%, 3%,6%, and 9%), the second factor was amount of yeast (0.5% and 1 %) and the third was duration of fermentation (1 hour and 2 hour). The observed parameters were physical (rate of expansion and texture), chemical (moisture content, ash content, protein content, and dietary fiber) and organoleptic test (appearance, texture, aroma, and flavor). The results showed that the addition of yellow sweet potato flour had significant effects on rate of expansion, texture, moisture content and ash content, amount of yeast had significant effects on rate of expansion, texture, moisture content and ash content while the fermentation had significants effect on rate of expansion and moisture content. Interaction of three the factors had not significant effect. The best treatment is sweet bread with substitutions yellow sweet potato with the treatment of A2B2C1 (yellow sweet potato flour 6%, amont of yeast 1% and fermentation 1 hour) is the threatment based on physical and chemical (87.85% of rate of expansion, 249.90 gf of texture, 10.55% of moisture content, 1.67% of ash content, 7.35% of protein content, and 12.18% of dietary fiber).
