Abstract

The purpose of this research was to determine the effect of coffee (Coffea sp.) varieties on decaffeination process using boiling and steam systems. This research was conducted at the Laboratory of Agricultural Product Chemistry, Departement of Agricultural Technology, Faculty of Agriculture, University of Sriwijaya, Indralaya. The research was conducted in October 2014 until April 015. The research used factorial randomized block design with two factors and three replications. The first factor was coffee (Coffea sp.) varieties (Arabica and Robusta). The second factor was the decaffeination methods (boiling system, steaming system dan without decaffeination). The observed parameters were yield, moisture content, ash content, pores diameter of coffee bean and caffeine content. The result showed that coffee varieties had significant effect on water content, pores diameter of coffee bean, caffeine content and ash content. Decaffeination methods had significant effect on average yield, water content, pores diameter of coffee bean, caffeine content and ash content. Furthermore, interaction between coffee varieties and decaffeination methods had significant effect on caffeine content. The best treatment was found to be A1B1 treatment (Arabica coffee, boiling system) with the characteristics of yield of 71%, water content of 15.67%, pores diameter of coffee bean of 26.75μm, caffeine content of 1.37% and ash content of 1.51%.
