Abstract

The objective of this research was to determine the effect of gaharu leaf powder characteristic as fungsional drink water. This research was conducted in the Chemical Laboratory of Agricultural Product at Department of Agricultural Technology, Faculty of Agricultural, Sriwijaya University, from June 2016 to Desember 2016. This research used Factorial Completely Randomized Design with two factors and each treatment was conducted in triplicates. The first factor was concentration gaharu leaf (5%, 10%, 15% v/v) and the second factor was concentration egg whites (2,5%, 5%, 7,5% b/v). The observed parameters were physical (water solubility index and yield), and chemical (moisture content, phenolic content, and antioksidant activity) characteristic, and organoleptic test using hedonic test of aroma, and test. The results showed that the concentration of gaharu leaf had significant effects phenolic content and antioksidant activity. While the concentration of egg whites had significant effects on water solubility index, yield and moisture content and antioxidant activity. Based on physical and chemical analysis, the treatment of A3B3, water solubility index 74,48%, yield 83,48%, moisture contents 6,10%, phenolic content 981,49 mg TAE/100 g, antioksidant activity IC50 1116,90 ppm and hedonic scores for taste, 2,64 and flavor 2,94.
