Abstract

This research using descriptive analysis of data parameters measured and classified in tabulations include analysis of the working capacity of the cutting tool on some physical properties of gel batter conditions. Each of these trials on various conditions of lenjeran cutting temporary drying temperatures do repeat 3 times. Treatment on surface condition of lenjer at temporary temperature after boiling or before deductions consist of: A) Lenjeran on conditions after boiling, B) 10 minutes drying room temperature with a fan, C) 120 minutes drying oven at 50o C, D) 22 minutes drying oven 100 ° C, and E) 48 hours drying at room temperature. The results showed that the highest water content of kemplang cracker was 46 % as well as plasticity of 195.7 gf and bulk density of 0.00131 g.mm-3 , those have produced equipment theoretical capacity of equipment was 9kg/jam and effective capacity of 7,34kg/jam with equipment’s efficiency of 82 %. The main factors that have affected the efficiency and capacity cuts lenjeran work with wire cutters is plasticity (hardness, softness).
