Abstract

The research objective was to know the characteristics of arabica coffee low caffeine based on maturity level and diameter size. The research was conducted on September 2018 until July 2019 at Segamit Village, Semendo Darat Ulu Districts Muara Enim, Biosystem Laboratory, Agriculture Chemical Product Laboratory Department of Agricultural Technology Sriwijaya University, Indralaya. The research used Factorial Completely Randomized Design (RALF) with two treatment factors colors of the maturity level coffee bean consisting of three levels namely the red, the reddish yellow and green and the size coffee bean consisting of three levels,large (not pass diameter of 6.55 mm), medium (not pass diameter of 6 mm) and small (not pass diameter of 5 mm). This research consisted three parameters of caffeine, water content, ash content, yield, lipids content, protein content and carbohydrate content. The result of this research showed that the difference of maturity level coffee bean and size coffee bean affect the caffeine, water content, ash content, yield, lipids content, protein content and carbohydrate content. The combination of interaction of maturity level coffee bean and size coffee bean significantly affected the caffeine, water content, ash content, yield, lipids content, protein content and carbohydrate content. The best treatment of the caffeine A3B3 1.13%, water content A1B1 4.54%, ash content A3B3 5.51%, yield A1B1 94.55%, lipids content A3B3 6.87%, protein content A1B1 9.79% and the carbohydrate content A1B3 83.09%.
