Abstract

Tujuan penelitian ini untuk menganalisa pengaruh tempat tumbuh dan metode penyangraian terhadap aktivitas antioksidan kopi arabika (Coffea arabica). Penelitian ini dilaksanakan pada bulan Maret sampai Oktober 2017 di Laboratorium Kimia Hasil Pertanian dan Laboratorium Evaluasi Sensoris Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan dan diulang sebanyak tiga kali. Faktor pertama yaitu proses penyangraian (tidak disangrai dan disangrai suhu 200oC selama 8 menit) dan faktor kedua yaitu tempat tumbuh (Arabika dari Semendo, Kabupaten Muara Enim, Arabika dari Kabupaten Ogan Komering Ulu Selatan, dan Arabika dari Kota Pagaralam. Parameter yang diamati adalah warna, kadar air, kadar abu, pH, kandungan kafein, aktivitas antioksidan, serta uji organoleptik dengan menggunakan uji hedonik terhadap warna, aroma, dan rasa. Hasil penelitian menunjukkan bahwa perlakuan metode penyangraian berpengaruh nyata terhadap kadar air, pH, kafein, aktivitas antioksidan dan warna (L*, a*, b*). Perlakuan tempat tumbuh berpengaruh nyata terhadap pH dan warna (L*, b*). Interaksi antara metode penyangraian dan tempat tumbuh berpengaruh nyata terhadap pH.
