Abstract

Coffee is one of the most popular beverage products of all over the world and the second most traded commodity after petroleum products. The caffeine content in coffee causes adequate coffee consumption can be beneficial but at excessive doses can endanger health. Caffeine levels in coffee can be reduced by the decaffeination process. This research aims to determine the decrease in caffeine levels, nutritional value, pH and color of coffee beans on coffee decaffeination device which has been designed based on solvent percentage and decaffeination time. The Solvents percentage used were 75%, 80% and 85% for 2 hours, 4 hours and 6 hours. The observed parameters were caffeine, decaffeination rate, proximate, pH and color of coffee beans. The results showed that the percentage of solvents significantly affected the levels of caffeine, water content, ash content, protein content and carbohydrates content and the time of decaffeination significantly affected the levels of caffeine, water content, lipids content, protein content, carbohydrates content and colors of coffee beans. Based on the declining caffeine levels of decaffeinated coffee with a percentage of solvent of 85% for 6 hours is the best treatment with a decrease in caffeine of 0.20 grams per 100 grams of coffee beans with a decaffeination rate of 0.033 grams / hour.
