Abstract

ABSTRACT CITRA H. NAINGGOLAN, Effects Of Protease Enzyme Isolates from Swamp Water with Antioxidant Activities Skin of Snakehead (Channa striata) Fish Peptides (Supervised by ACE BAEHAKI and INDAH WIDIASTUTI). The purpose of this research was to know the content of bioactive peptides that have antioxidants function in skin of snakehead (Channa striata) protein. This research was conducted from August 2018 until December 2018. This research method used randomized block design (RBD) consist of 5 treatments hydrolysis time (0, 30, 60, 90, 120 minutes) and two replications which included several stages that were preparation and pretreatment skin of snakehead, production of protease enzymes isolates from swamp water, preparation of protein hydrolyzates, measurement of hydrolysis degrees, analysis of peptide content and analysis of antioxidant activity. The results showed that the treatment had gave a significant effect on the 5% level of the degree of hydrolysis produced (13.98%- 27.08%), peptide content (2.73%-3.78%) and antioxidant activity (10.75%- 20.7%).
