Abstract

The aims of this research was to determine the effect of canna strach additions on physical, chemical, and oraganoleptic of pempek rucah fish. This research was conducted in March 2019 until April 2020 at Laboratory of Agricultural Product Chemical and Sensory Laboratory of Agricultural Technology Faculty, Sriwijaya University. This research used a non Factorial Completely Randomized Design with six treatments and each treatments was repeated three times. The factor was ratio of sago flour and canna starch (100:0, 90:10, 80:20, 70:30, 60:40, 50:50). The observed parameters were physical characteristic (color and texture), chemistry (moisture content, protein content, lipid content, and crude fiber content) and organoleptic characteristics (appearance, texture, taste and flavour). The result showed that the ratio of sago flour and canna flour had significant effects on physical characteristics (texture, lightness, hue) and organoleptic characterisics (flavour, taste and texture). Fish trash pempek with sago flour and canna flour (A3 treatment) had met the requirement of water content, protein content and fat content according to Ministry of Health of the Republic of Indonesia. A3 treatment of Pempek rucah fish (sago flour 80 % : canna starch 20%) was the best treatment according to sensory evaluation (appearance, texture taste and flavour) which was categorized as liked by most panelists.
