Abstract

The purpose of this study was to analyze the physical, chemical, microbiological and organoleptic properties of mayonnaise that have been added tempoyak. This research was conducted from November 2019 till July 2020 at the Laboratory of Agricultural Product Chemistry, Laboratory of Agricultural Product Microbiology and Sensory Laboratory of the Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This study used a non factorial Complete Randomized Design (CRD). One factor was investigated, namely tempoyak addition to mayonnaise (0, 10, 20, 30, 40 and 50%, w/w). All experiments were carried out in triplicate. The obtained data were then processed using analysis of variance (ANOVA). Should the ANOVA results showed the significant effects, then the treatments were analyzed further using the 5% Honestly Significant Difference test. On the other hands, the hedonic data were analyzed using Friedman-Conover test. The observed parameters were physical (viscosity and emulsion stability), chemical (water content, pH value, total acid content and water activity), microbiological (population of lactic acid bacteria) and sensory properties using hedonic test (color, taste, aroma and viscosity) . The results indicated that tempoyak addition significantly affected viscosity, water content, total acid content, and lactic acid bacteria population. According to hedonic test, the F treatment (mayonnaise 25% + tempoyak 75%) was the most preferred sample based on the highest average score for color and viscosity with the following average scores: color 3.00, aroma 2.84, taste 2.92 and viscosity 3.00.
