Abstract

Potential of Spirulina platensis in the development of low sugar, salt, fat snack bars as α-Glucosidase inhibitors Dinar Syafina 08061281621036 ABSTRACT Spirulina platensis is a blue green algae that contains substances that are useful as α-glucosidase inhibitors. This can play an important role for people with diabetes mellitus. The purpose of this study is to develop S. platensis into a spirulina snack bar that is low in salt and fat and has inhibitory activity α-glucosidase. Spirulina snack barmade from 10% spirulina platensis, 60% oats, 17.5% peanut butter and 5% honey. The nutrients contained in spirulina snack bar produced are protein levels of 31.16%, fat content of 21.7% and carbohydrate content of 39.4%. Enzyme Inhibition Testα-glucosidase is carried out in vitro using a microplate reader.The results showed a large IC50 Spirulina snack bar is 48,814 ppm, IC50 69,215 ppm snack bar base and 126.26 ppm rootbose. Snack bar has the potential to be a greater α-glucosidase inhibitor than roots bose. The results showed that the level of people's preference for snack bars in terms of color (3.96), aroma (3.96), and taste (3.87) was like. while texture (3.39) the level of community preference is neutral. Spirulina snack bar has a crunchy texture, tastes rather sweet, dark green and has a distinctive aroma of seaweed. The results of the statistical tests of the proximate and hedonic tests using independent t-test showed that there was no significant difference (P> 0.05) between the average proximate and hedonic test results of snack bar and spirulina snack bars.
