Abstract

The objective of this research was to determine the effect of variations acidity level and maceration temperature on physical, chemistry, and microbiology characterristics of mangrove leaves (Avicennia marina) extracts. This research began in November 2018 until April 2019. The research was held at Agriculture Product Chemistry Laboratory and Microbiological Laboratory, Agriculture Technology Department, Agriculture Faculty, Sriwijaya University, Inderalaya The study was used a Factorial Completely Randomized Design with 2 (two) treatment factors and each treatment was repeated three times. The treatment factors were variation of acidity (A) and maceration temperature (B). The observed parameters included color (lightness, chroma, hue), pH, total phenol, tannin content, antioxidant activity and antibacterial activity. The results showed that the treatment of acidity variations had a significant effect on color (lightness, chroma, hue), pH, total phenol, tannin content, antioxidant activity, and antibacterial activity of S.aureus and E.coli. Maceration temperature treatment significantly affected the color (chroma, hue), pH, total phenol, tannin content, antioxidant activity and antibacterial activity of S.aureus and E.coli. The interaction between the variation of the acidity and the maceration temperature significantly affected the total phenol. The treatmen of A2B2 (acidity 5,5; maceration temperature 80oC) was able ti inhibit the highest antibacterial activity inhibition in bacteria S.aureus and the treatment of A1B3 (acidity 4.0; maceration temperature 100oC) with the highest antibacterial activity inhibition in bacteria E.coli.
