Abstract

An alternative to postharvest tomato preservation using ozone produced by Dielectric Barrier Discharge (DBD) based plasma technology has been tested on a laboratory scale. This study observed the length of ozone exposure, storage temperature, and tomatoes that were exposed to ozone at different times. The ozone used in the research was generated from the DBD chamber using aluminum electrodes with a material thickness of 0.5 mm and a gap between the electrodes of 1 mm. In general, ozone exposure at a concentration of 480,7 ppm has an effect on the long storage time of tomatoes at certain temperatures. These results indicate that ozone exposure affects the hardness of the tomatoes, total dissolved solids, and the degree of acidity of the tomatoes. With a length of exposure for 1 hour, and a storage room temperature of 7 ° C. The hardness value of tomatoes was 13,3.105 Pa or 27,06% higher than tomatoes stored at 28 ° C, namely 13,3.105 Pa. With a long exposure of 1 hour at 7 ° C is also able to maintain the freshness of tomatoes for 14 days. Keywords : Tomato, Dielectric Barrier Discharge, Ozone Concentration
