Abstract

Research has been carried out on the preparation and submicro characterization of particles carrying the sap of mountain papaya (Carica pubescens Lenne & K. Koch) with various concentrations of CaCl2 using the ionic gelation method. This study aims to determine the effect of variations in the concentration of CaCl2 on the sub-micro particle formula. Exudate of mountain papaya fruit contains several secondary metabolite compounds, namely flavonoids, alkaloids, steroids, and saponins. It is known that the level of flavonoids in the exudate of the mountain papaya fruit is 21.8363 mg / g. Preparation of submikro done by coating exudate particles with a polymer chitosan and sodium alginate and CaCl2 as crosslinker, varying concentrations of CaCl2 at 20, 40 and 100 mL. The three sub-micro particle formulas produced percent values encapsulation efficiency (EE) of 92.57%, 91.46%, and 91.19%, respectively. The results of sub-micro-particle characterization for diameter, PDI, and zeta potential using a particle size analyzer (PSA) at the best formulas were 296.2 nm, 0.494, and +37.4 mV, respectively. The results of the stability test on submicro particle preparations by heating cooling cycle showed no organoleptic changes and significant pH changes from cycle 1 to cycle 6.
